This wine comes from the vineyards of Pic Saint Loup in the heart of Languedoc, along France’s Mediterranean coast. In the foothills of the Cévennes mountains, the grapes thrive in gravel and limestone-clay soils. A blend of Grenache and Cinsault, they’re destemmed, crushed, and directly pressed. The pale rosy hue comes from a short time on the skins before a slow, cool fermentation in concrete vats.

2 ripe but firm peaches, halved and pitted
4 cups fresh mixed baby greens
4 ounces creamy goat cheese, crumbled
1/4 cup toasted pecans, roughly chopped
3 tablespoons rich extra virgin olive oil
1 tablespoon aged balsamic vinegar
1 teaspoon wildflower honey
1/4 teaspoon flaky sea salt
1/8 teaspoon freshly cracked black pepper
Instructions
